New Chef, new menu at Grand Millennium Kuala Lumpur
Lai Ching Yuen at the Grand Millennium Kuala Lumpur is thrilled to welcome Guest Chef Lee Kook Siong for two special evenings this June. Chef Lee, who recently worked at 藝 yì by Jereme Leung at Raffles Singapore, hails from Ipoh and is a well-known figure in Malaysia’s culinary scene.
Chef Lee’s menu at Lai Ching Yuen will feature exquisite Cantonese dishes, showcasing his creativity and deep knowledge. One highlight is the Steamed Red Star Grouper Fillet with Jin Hua Ham and Mushrooms (麒麟金华扎红鱼), a dish that revives a popular banquet style from the 70s and 80s. The fish is carefully deboned, sliced, and wrapped in beancurd skin with ham and mushrooms, offering a blend of smokiness and subtle sweetness. Another standout is the Dried Scallop & Egg White Fried Rice (带子瑶柱蛋白炒饭), which uses silky egg whites and dried scallops for a fragrant texture.
